Chole Bhature

Ingredients:  

- 2 cup maida  
- 1/2 cup dahi  
- 1/2 tsp baking powder  
- 1/4 tsp baking soda  
- 1 tsp cheeni  
- 1/2 tsp namak  
- 2 tbsp oil  
- Paani (zarurat ke hisaab se)  
- Tel (talne ke liye)

Chhole ke liye:  
- 1 cup kabuli chana (raat bhar bhigo ke)  
- 2 pyaz (bareek kati)  
- 2 tamatar (bareek kate)  
- 1 tbsp adrak-lehsun ka paste  
- 2 hari mirch (bareek kati)  
- 2 tsp chhole masala  
- 1 tsp jeera  
- 1/2 tsp haldi  
- 1 tsp dhaniya powder  
- 1 tsp lal mirch  
- 1/2 tsp amchur  
- Namak swad anusar  
- 2 tbsp oil  
- Hara dhaniya (garnish)


Method:  

1. Maida, dahi, baking powder, baking soda, cheeni, namak aur oil mix karo paani daal ke soft dough gundh lo. 2-3 ghante dhak ke rakh do.  
2. Chana ko pressure cooker me namak aur paani ke saath 5-6 siti tak ubaal lo.  
3. Pan me oil garam karo jeera, adrak-lehsun paste, hari mirch, pyaz bhuno.  
4. Tamatar, haldi, dhaniya powder, lal mirch, chhole masala, amchur daal ke masala bhuno.  
5. Uble chhole daal kar 10-15 min tak pakao hara dhaniya daal ke garnish karo.  
6. Dough ke chote balls banao bel ke bhature shape do.  
7. Garam tel me bhature golden brown hone tak deep fry karo.  
8. Garma-garam chhole aur bhature serve karo!
